Holiday Hash Brown Breakfast Sandwiches






Since I’ve been old enough to cook, it’s been my responsibility to make breakfast on Christmas morning. All grown up now, I still enjoy getting everyone fueled up for the day with a hearty breakfast. The secret to making a holiday breakfast is the right mix of decadent, easy, and fast with the ability to right-size for any crowd. This recipe uses Cavendish Farms Hash Brown Patties as the base for gourmet breakfast sandwiches and adds the perfect savoury crunch that bread just can’t compete with. Set up the ingredients as a make-your-own breakfast sandwich bar and allow your family/guests to mix and match ingredients to suit their own unique tastes. Happy Holidays!



Ingredients:
· 1 package Cavendish Farms Hash Brown Patties
· 5 slices of old cheddar cheese
Tomato and Avocado Breakfast Sandwich:
· 2 tomatoes, sliced
· 1 avocado, sliced
· 3-4 over-easy eggs
· Serve with mayonnaise

Bacon & Egg Breakfast Sandwich
· 5 -10 slices of crispy cooked bacon
· 4 eggs, scrambled
· 2 tablespoons chopped green onion
· Serve with mayonnaise

Smoked Salmon Breakfast Sandwich
· ½ cup cream cheese
· ¼ red onion, sliced
· ½ lemon, cut in wedges
· 2 tablespoons chopped fresh dill
· 200 grams smoked salmon
Note: Make two Hash Brown Patties per guest and adjust to the size of your group. If cooking for a big crowd, double the ingredients.


Directions:
1. Bake the Cavendish Farms Hash Brown Patties according to package directions.
2. Meanwhile prepare the other ingredients and arrange for guests to help themselves.
3. Once the patties are baked remove half of them from the oven and place cheese slices on other half and bake for an extra minute until melted.
