I’m first generation Canadian and
didn’t have a typical North-American holiday dinner until I married my Prince
Edward Islander-husband. My family always had a big Italian meal with a couple
smatterings of Canadian dishes, like lasagna AND a turkey. Now that I am all
grown up and host my own dinners, I try and combine both traditions to create a
balanced meal that will satisfy the Islanders and Italians in my family. This
holiday salad recipe brings together Mediterranean-inspired flavours and the
universal holiday food – potatoes, to create a unique dish that is festive and
flavourful. The sweet, nutty, and tart
elements of the salad along with the crispy, savoury fries will really shake up
your holiday dinner this year!
Ingredients:
(Serves 6)
Salad
- 1 package Cavendish Farms® FlavourCrisp Crispy Straight Cut fries
- 1 cup fresh cranberries
- ½ teaspoon each ground cinnamon and nutmeg
- 6 cups arugula
- ½ cup walnuts or pecans (halved or in pieces)
- ⅓ cup crumbled feta
Honey Vinaigrette
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon honey
- 2 teaspoons Dijon mustard
- freshly ground black pepper, to taste
Directions:
1. Arrange Cavendish Farms® FlavourCrisp Crispy
Straight Cut fries and cranberries on a non-stick baking sheet in a single
layer and sprinkle with cinnamon and nutmeg. Bake according to Cavendish Farms®
FlavourCrisp Crispy Straight Cut directions (you may need to add an extra 5
minutes of cooking time or until fries are a light golden colour due to the
extra moisture from cranberries).
2. In the meantime, combine all ingredients for
vinaigrette in a mason jar with tight fitting lid and shake until blended.
3. To assemble: place arugula on a large serving
platter, top with fries and cranberries, and then nuts and feta. Drizzle with
dressing and serve warm.
