Top 5 Barbecuing Tips

Barbecue season is finally here! I know there are some year-round barbecuers out there (you are my heroes); but for those of us who painstakingly wait for warm weather, this is always a much-anticipated event. Just about everything tastes better grilled and it makes meal planning a cinch – just throw on some protein and vegetables and you’ve got a complete meal. To help you all embrace this cooking powerhouse, I am sharing my Top 5 Barbecuing Tips.

1.  Marinate. Anywhere from 30 minutes to 2 hours, marinating can add a depth of flavour to your food. Use a mixture of oil, acid (like vinegar, citrus, or wine), and seasonings. My go-to for chicken is olive oil, lemon juice, garlic, and fresh rosemary.

2.    Don’t over flip and let meat rest before cutting/serving. This ensures you lock in all the natural flavour and juices.

3. Save the basting for last. Most marinades have sugar which can easily char, waiting until the end prevents this from occurring.

4. Add ground pork to your burgers.  Mix some ground pork in with your ground beef for a juicier burger. Also, make an indentation on the top of your burger with your thumb before cooking so they don’t puff up.

5.  Don’t forget your vegetables. Just about any vegetable can be grilled. My favourites are zucchini and mixed sweet peppers dressed with olive oil, balsamic vinegar, parsley, salt and pepper and baked potatoes (see recipe below).

Yogurt & Chives Topping
Ingredients:
·       ½ cup Greek yogurt
·       ½ cup cream cheese
·       ½ cup sour cream
·       2 tablespoons chopped fresh chives
·       Sale & pepper to taste




Directions: Combine all ingredients in a serving bowl. Chill until ready to serve.
